I accidentally ate siracha a year after being expired and it was fine.
Seeing as its fermented in giant drums for weeks. It only gets "better". Even at room temp. Its too acidic for much to grow.

When meat has flies on it it's still safe. Because of all the flies and maggots you are actually getting more meat than you were originally
