They are donating plasma. Having donated blood before, they don't hook you up to a machine. The blood bag is lower to the ground as only gravity is needed to get the blood moving once you squeeze a ball.

I never donated plasma, but they do need to hook you up to a machine which separates the plasma from the blood and then returns the blood back to the donor. As you can see the plasma machine in the picture below is the same one Nikki is hooked up to.

They also use that machine to collect a double unit of red cells. It centrifuges your blood to separate your plasma from the red cells and returns the plasma with some saline and anticoagulant.
