Because Anthony portrays himself as a red blooded adult male no matter how superficial it all is. Sports cars, guns, Republican politics, big home, etc. Remember the story of Melissa saying Ant brandished his gun to a guy hitting on her? He gives off the perception that he’s a functioning adult and his radio persona is a character. Then not even a week into the relationship his true colors show. Screaming at the TV, passing out on Xanax, drunken confessions of fucking ladyboys, crying during breakups, playing COD until 4am, can’t sleep without the TV on, completely impotent, addicted to T shots and hair follicles, etc. He’s anything but a man. Sue Lightning is more a man than him.

Jill threw a $50K party at Anthony's house during their first month or whatever of 'dating'. Catering, bartenders, entertainers, huge guest list, new furniture, limousines. It was so extravagant that people thought that they would gather everyone up at one point during the party and announce "We are getting married....we're engaged!". Because so much money had been spent on the great Long Island Rubbish Extravaganza.
Jill was always trying to lure rich guys into marriage.
It was abnormal at the start. They missed multiple days of work immediately during the first two weeks of their relationship. Jill was telling people that they would probably get married. All of their dates involved copious amounts of alcohol. Anthony was paying for girls to come to his house basically planning for Jill to find them and break off the relationship almost immediately sabotaging the relationship.
You knew that based on how Anthony was talking he was seriously entertaining the idea of marrying Jill. And having a family. So that he could finally look normal to the O&A audience. And give his public persona a huge boost in perceived masculinity and responsibility. But the idea of having to live with a woman and explain to her "I'm actually into ladyboys and black peckahs" made old 'pissy eyes' lose his mind. Too much of a risk to actually live that full double life.
To be fair Jill started it. She actually got the better digs in on Anthony like talking about his drug addictions and how he was a scared little bitch over contract negotiations. And was afraid of Opie and management and had to dope himself to get through meetings. What a fruit.
