I know it's not common by any means, but the best meat i've ever had was American Bison. There used to be a Bison ranch out in the country from my town and when the guy had to put one down he'd sell the meat. I've never had stuffing in a chicken, but have had chicken "stuffed" with things like lemon, herbs etc. Definitely stuffing in turkey.
