Garlic, onion, cumin, S&P, can of tomatoes (you judge whether they need to be salted or not), can of green chiles (hatch, poblano, something mild), then add more heat to your liking. I like a few pinches of powdered chipotle for a smoky flavor, or ancho for a more enchilada taste.

Put these two in a blender and add enough water to cover the meat. Done. Add a packet of taco mix if you want a more traditional flavor.

This recipe is what I do, but I use fire roasted tomatoes. They add a bit of smoky flavor to the recipe and just taste better for Mexican foods in my opinion.

I've been meaning to try alton brown's slow cooker pork recipe but idk if it might be too sweet for tacos. i think it's hard to go wrong with slow cooker recipes, just don't use any processed bbq sauces or anything with corn syrup in it.
